REVIEW: Lots of fine bubbles are found in this pale straw coloured Sparkling Wine made from Pinot Noir, Chardonnay, and Aligoté. On the nose, there’s aromas of baked apple pie in a rich buttery crust as well as zesty lemon and roasted macadamia nut.

It is a medium to full bodied sparking wine that has a certain opulence on the palate. The flavours are of apple, lemon, and hazelnut biscotti. The finish is bitter and slightly nutty.

Wine-Food Pairing: This one is great on its own but is very versatile. It would work well with salty fried appetizers, sharp salty cheeses, fried chicken, seafood, or with tempura sushi rolls, to name a few options.
